here is a recipe from my Italia cookbook:
400g maccheroni or spaghetti alla chitarra
salt and pepper
60g butter
2 tb olive oil
1 onion, very finely sliced
1 garlic clove, finely chopped
150g Parma ham or other raw cured ham, finely diced
8 basil leaves, torn
3 tb coarsely chopped flat leaf parsley
1/2 - 1 red chilli, chopped
50 ml red wine
150g polpa di pomodoro or chunky passata
boil pasta
for the sauce, heat the butter and olive oil in a pan and gently fry the onion with the garlic until soft. Add ham and saute. then add the basil, parsley, chillit and wine. Cook for 3 min, then add the tomato pulp and season with salt and pepper to taste. Cook for a further 3 min.
