Four nicely prepeared meals this weekend.
1. A kind of mixture of Baighan Barta & Dal Mahkni. Yellow lentils, aubergine, tomato and chilli with "indian" spices.
2. Pizza. Poor-man's variant. Tomato slices, mushroom & olives (also contained chilli and curry!?)
3. Apple cake (nope, not pie). Should have had more apples, but tasted quite good anyway. Threw in some raisins and almonds along with the usual honey-instead-of-sugar.
4. Spring-rolls (egg-rolls?) Tried making them from scratch for the first time. Really nice result. Filled them with cucumber, carrot and cabbage along with some powdered chilli and soya sauce.

Cooked a hell of a lot lately. Yesterday made a tomato and vegetable pie. Was very nice. For supper prepared a cheese pie. Today for the kids made a batter and battered some vegeburgers and served them with herbed up cous cous.

Start with shepherds pie. I use the filling for the shepherds pie minus mince (I use quorn mince for shepherds pie and quorn pieces for standard pie) in the following recipe. If I were you and you're a meat eater, follow this recipe to the letter:

Don't worry about serving it with the carrots (though they are nice like that), serve it with whatever you want.
Batter. No hard fast rule. You can make a nice batter out of just flour and water. I use cup of flour, two eggs and milk to get the consistency, not too thin for deep frying and not too thick for yorkshire puddings and toad in the hole. Secret to frying batter is put the batter in the fridge an hour before cooking and make sure your oil is hot. This was the hot oil on cold batter makes it crispier and you get less fat saturation. You also tend to get a less greasy result.
With that pie recipe, dried herbs instead of fresh are not an issue and use any potatoes you want. Greated fresh parmasan is the icing on the cake, makes it very crispy.
