They are evil. I love them.

Bermudian Banana Bread

1 1/2 cups flour
1 tsp. salt
1 tsp. baking soda
3/4 cup dark brown sugar
1/3 cup butter
2 eggs, beaten
2 small bananas, mashed
1/3 cup milk

Preheat oven to 350 degrees. In a small bowl, sift together the flour, salt,
and baking soda. Set aside. In a large bowl, cream the sugar and butter. Add
eggs, one at a time, to butter mixture, mixing well. Add mashed bananas and mix
thoroughly. Gradually add dry ingredients, alternating with milk, continuing to
mix. Pour into a greased loaf pan coated with bread crumbs. Bake for one hour.
Cool in pan on wire rack for 5 minutes. Remove bread from pan and continue to
cool.

Dense Zucchini Bread

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/4 teaspoon baking powder
3 eggs
2 cups white sugar
3 teaspoons vanilla extract
1 cup vegetable oil
3 cups grated zucchini
1 cup chopped walnuts (optional)

1. Preheat oven to 350 degrees F (175 degrees C).
2. Sift together flour, salt, soda, cinnamon, baking powder.
3. Beat eggs. Add and mix well sugar, vanilla, and oil. Add zucchini to egg mixture. Add dry ingredients, mixing well. Stir in nuts if desired. Pour into 2 ungreased loaf pans.
4. Bake at 350 degrees F (175 degrees C) for 1 hour.

Strawberry Spice Loaf

3 cups all-purpose flour
2 cups white sugar
1 teaspoon salt
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
1 1/4 cups vegetable oil
4 eggs, beaten
2 (10 oz.) packages frozen strawberries, thawed or about 20 oz. fresh strawberries

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
2. In a large bowl, combine flour, sugar, salt, cinnamon, nutmeg and baking soda. In a separate bowl, combine oil and eggs. Add strawberries (juice and all) to oil/egg mixture. Mix thoroughly. Make a well in the center of the dry ingredients and pour in the strawberry mixture. Mix until thoroughly combined. Pour batter into prepared pans.
3. Bake in preheated oven for one hour, or until a toothpick inserted into the center of a loaf comes out clean. Cool slightly before removing from pans.

Pumpkin Bread

3 cups pumpkin puree
1 1/2 cups vegetable oil
4 cups white sugar
6 eggs
4 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 1/2 teaspoons ground cloves

1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

Variations:
Add raisins, mini chocolate chips, pecans, or walnuts.

Lavender Tea Bread

3/4 cup milk
3 tablespoons finely chopped fresh lavender
6 tablespoons butter, softened
1 cup white sugar
2 eggs
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

1. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x5 inch loaf pan.
2. Combine the milk and lavender in a small saucepan over medium heat. Heat to a simmer, then remove from heat, and allow to cool slightly.
3. In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg until the mixture is light and fluffy. Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk and lavender until just blended. Pour into the prepared pan.
4. Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the crown of the loaf comes out clean. Cool in the pan on a wire rack.

Serve with fresh sliced strawberries on top.

Orange Loaf

1/2 cup butter
1 cup white sugar
2 eggs
1 tablespoon grated orange zest
1/2 cup fresh orange juice
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)
1/2 cup orange juice
1/4 cup white sugar

1. Stir together flour, baking powder, salt, and nuts.
2. In a large bowl, beat together butter or margarine and 1 cup sugar. Beat in eggs one at a time. Stir in rind and 1/2 cup juice. Pour in flour mixture, and stir until moistened. Turn into a greased 9 x 5 x 3 inch loaf pan.
3. Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Remove loaf from oven, but not from pan.
4. Combine 1/2 cup orange juice with 1/4 cup sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon glaze over hot loaf. Let stand in pan for 10 minutes before removing loaf to rack to cool.

Gingerbread

2 cups all-purpose flour
1 cup sugar
1 cup dark molasses
1 cup vegetable oil
2 eggs
4 teaspoons ground cinnamon
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg

Mix all ingredients together and place in a greased and floured 9 x 13"
baking pan. Bake at 350 F for 35 minutes.

Serve with fresh whipped cream, lemon sauce, or caramel topping.

mmm bread.... due to the poor state of my financial affairs, I have been staying at home baking breads on sunday.... fresh bread with butter owns....

My dad's best mate used to own a bakery and he'd fetch us fresh bread and cakes every morning. The smell is fantastic. Fresh warm bread and butter is delicious.
