winter's coming...need soup. got anything interesting/delicious?





tried this tonight...not bad. sweet & creamy with a back end of spicy goodness.

Curried Sweet Potato Soup
1 tablespoon oil
1 large onion, chopped
2 cloves garlic, crushed
1 tablespoon curry powder
2lbs 12oz (1.25 kg) sweet potato, peeled & cubed
4 cups (1 litre) chicken stock
1 large apple, peeled, cored, and grated
1/2 cup (125 ml) coconut milk
salt

-Heat oil in large pot. Cook onion over medium heat until soft (10 min).
-Add garlic & curry powder. Stir to coat everything, and cook for another minute.
-Add the apple, sweet potato, chicken stock - stir to combine. Bring to a boil, reduce heat, and simmer partially covered for 30 mins - until the potato is really soft.
-Process with blender or food processor until smooth.
-Return to pot. Stir in coconut milk, reheat gently without boiling.
-Salt to taste.




as I said; not bad, but it feels like something else could go in there....garam masala possibly...maybe some butter & black pepper. I just don't want to fuck it up.

Leek and potato soup.

4 leeks trimmed and washed and chopped.
1 red onion chopped.
1 strong cooking onion chopped.
2 carrots finely grated.
4 large potatoes, two grated and two chopped into 1/2 inch cubes.
1 pint of vegetable or chicken stock
salt and pepper.
25 gram butter.

Heat butter and a little olive oil and sweat the chopped leeks and onions.
Boil the chopped potato and half the grated carrots separately until they get soft and set aside.
When the leeks are softened add the grated potato and remainder of the carrots and the salt and pepper and pour over the vegetable stock and bring to the boil.
Blend the leek, onion, carrot and potato mixture until smooth. Don't bother passing through a sieve.
Add the chopped potato and carrots to the soup mixture and reheat and serve with some crusty bread laced with some salt crystal butter.

This isn't a traditional recipe for this soup, I'd one I've adapted to my own ends.

This would go great with some chopped chicken and sweetcorn too.

lentil soup

1-2 cups of dry lentils
1/2 yellow onion, diced
1-2 red potatoes, diced
2 cloves garlic, minced
~32 oz veggie broth (2 of those boxes)
1/2 cup diced celery and carrots
optional 1 lb stew meat
salt, pepper, red pepper, cinnamon, ginger and nutmeg

if you're using the meat (and i highly suggest you do) brown that in a little olive oil
throw in your onions, garlic, celery and carrots
sautee till soft
throw in your diced potatoes and lentils
cook a couple minutes
season to taste with all your delicious spices
just a wee bit cinnamon, nutmeg and ginger!
add broth to cover and bring to a boil
let boil for a couple minutes then lower heat to simmer
add broth as needed
cook until taters fall apart and lentils are mushy

i usually low cook a couple hours or so
serve with a dollop of sour cream

Not the most economic meal, but absolutely divine and VERY filling.

French Onion Soup

Ingredients
80g butter
5 brown onions, sliced in rings
20g brown sugar
50ml cognac
200ml white wine
3 sprigs fresh thyme
5 fresh bay leaves
1 tablespoon Dijon mustard
750ml brown chicken or veal stock
Sourdough or French baguettes cut into 3cm slices
1 cup grated gruyere
Black pepper

Method
Melt butter in a large saucepan and add the onions. Add sugar and a little salt to help the caramelisation process. Cook over medium to low heat until the onions start to caramelise. Deglaze the pan with cognac and white wine and then pop in a couple of sprigs of thyme, bay leaves and the mustard and cook together. Pour in the chicken stock and reheat.

In an ovenproof serving dish, ladle in the soup and cover with a slice of bread. Top with gruyere, a pinch of pepper and chopped thyme and grill top until the cheese is melted and the crust is golden.

not sure what exactly was in it, but yoga chick made soup for me last night. home made chicken stock with random veggies and spicy goodness to kick a cold square in the nuts.
