Frittata
I make this all the time because it's easy and I can use whatever is handy:
Cook vegetables of your choice to near-doneness in skillet. Season with salt, pepper, and garlic, or however you like.
Blend 4 to 6 eggs, some grated hard cheese of your choice, oregano, basil, salt & pepper, etc., and a dash of cream or milk in a blender until frothy. Pour over vegetables in skillet. Top with crumbled or grated cheese such as feta, cheddar, or gruyere.
Heat for a few minutes on stovetop till bottom is set, and transfer to 350 degree oven for 10 to 15 more minutes, till poofy and golden on top.
Cut into wedges and serve with black velvets & mimosas.
