Random Recipes that Lynn has sent me

Here's a recipe for banana bread:

Yield 2 loaves
Time 1 hour
Tools 2 loaf pans OR 1 baking dish
small bowl
spoon
2 large bowls
whisk
sifter
wooden spoon

Ingredients 1-2 T butter or oil
¼ c sesame seeds
1 c strong black coffee
2 c ripe bananas, puréed
1½ c butter, softenened
1¾ c brown sugar
4 eggs
2½ t vanilla extract
½ t almond extract
1 t orange zest
4 c flour
1 t salt
½ t baking soda
1 T baking powder
½ t nutmeg
2 t cinnamon
¾ c chopped walnuts or pecans, optional

Directions Preheat oven to 350º. Grease the pan(s) then sprinkle with sesame seeds and shake around until they stick.
Stir the coffee into the puréed bananas and set aside.

Beat butter and sugar together, then beat in eggs, one at a time. When fluffy, add vanilla, almond extract, and orange zest.

Sift together flour, salt, baking soda, baking powder, nutmeg, and cinnamon.

Gradually combine dry ingredients with the butter/eggs and banana/coffee mixture - don't overmix. Stir in optional nuts.

Spread batter into pan(s) and bake for 35-50 minutes, until toothpick inserted into center comes out clean.

Cool for one hour before slicing.

A generic phrase that means "Black-eyed peas."

Here's a recipe I came up with yesterday, cheap, filling, delicious, VERY HEALTHY.

Boil black eyed peas until they're soft, meanwhile sauté onion with olive oil and
chopped parsley-lots of parsley, because it cooks down like spinach. While the
beans are still simmering, but have lost most of their water, add the onion-parsley
mix, then add some red-wine vinegar to taste, grate the rind of one orange, add some
cayenne pepper and salt to taste.

I like this with bread crumbs, too.

This one is pure yummy!

Make some mashed potatoes (with REAL butter and half and half) and fry up some
collard greens, then mix the two together. Take two eggs, and beat them with some
milk as if you were making an omelette. Stir this into the potato/greens mixture.
Add some fresh bread crumbs-I'd say about a cup and a half, then throw it in some
kind of a baking dish and put more bread crumbs on top, bake at 350 until I'm not
sure.

It's really good, like a cross between bubble & squeak and quiche.

Baked Potato Soup

4 baking potatoes (about 2 ½ lbs)
2/3 cup all-purpose flour
6 cups 2% milk
1 cup reduced-fat shredded cheddar cheese
1 teaspoon salt
½ teaspoon black pepper
1 cup reduced fat sour cream
¾ cup chopped green onions
6 bacon slices, cooked and crumbled

1. Preheat oven to 400 degrees
2. Pierce potatoes with a fork; bake at 400 for 1 hour or until tender. Cool. Peel potatoes; coarsely mash. Discard skins.
3. Lightly spoon flour into a dry measuring cup; Place flour in a large Dutch oven; gradually add milk, stirring with a whisk until blended. Cook over medium heat until thick and bubbly (about 8 minutes). Add mashed potatoes, ¾ cup of the cheese, salt, and pepper, stirring until cheese melts. Remove from heat.
4. Stir in sour cream and ½ cup onions. Cook over low heat 10 minutes or until thoroughly heated (do not boil). Sprinkle each serving with cheese, onions and bacon. Yield: 8 servings.

Oh yeah! I forgot to mention that I have made all of these and they are quite yummy.

Tejas Caviar looks nice. Might try that since i have about 20 different kinds of beans rotting in my larder.

Wow, this Lynn person sounds like a complete genius. Did she invent all of these amazing things? I bet she did. I wish to meet this "Lynn."
