Polpi Affogati

Stewed octopus

8 tb olive oil

8 fresh baby octopus, about 120 - 150g each, cleaned

2 garlic cloves, finely chopped

1 red chilli, finely chopped

500g polpa di pomodoro or chunky passata

bunch of flat leaf parsley

salt and pepper

heat the olive oil in a casserol dish. Add the octopus and fry, stirring, for a minute or so. Add the garlic and chilli and fry for a few seconds, then add the tomato pulp. Cover with a tight fitting lid and simer for about 30 min. Open the lid, scatter inthe chopped parsley and season with salt and pepper to taste.
