any good fried chicken recipes or tips ?
i am experimenting with this again and i have yet to have really good results , any help ?
the finished product is just the garbage left over from doing the work.

We make Parmesan Chicken quite alot:
Slice chicken breast into thin escalopes
dip into beaten egg white
press into a mixture of parmesan (shaker style) and black pepper until well coated
fry both sides in a non stick frying pan over moderately high heat until gold brown
serve with layered sliced tomatoes garnished heavily with shredded basil and drizzeled with your best olive oil and balsamic vinegar...

You know what's really good? If you crush up cool ranch doritos for coating. Maybe that's just a poor people thing...

I think he means just regular fried chicken.
I won't claim to be an expert, but Mom always made it like this:
Mix egg with milk
Dip the chicken pieces in the egg & milk
Roll in flour
Lay on a hot, greased skillet.
Cook it until it's brown.
Sorry, I couldn't be more specific because I've never actually cooked it before. I heard that if you chill the egg & milk mixture, it's lighter.

Ok here how black southerners make their fried chicken for real.
Ok get one chicken cut into as many pieces as you can i recoomedn at least 8 pieces
The trick is to season the meat itself not just the coating so take your favortie chicken spice and really rub into the meat with love like giving your partner a foot massage only more enthusiastic. I prefer some all in one seasoning that we get from street festivals here..but anything with cinnamon cumin onion garlic red and pblack pepper. is pretty much whets in it. but you can do how you like.
Then coat the chicken in flour only.. no egg no milk no breadcrumbs.
Fry in a nice oil until done.

It sounds eww, but to switch it up you might want to crush up a small amount of multigrain cereal like Multigrain chex or multi grain Cheerios. You dont want anything too sweet.
I did it with some strips of white skinless chicken breast, and fried it up in some corn oil.
Make sure its crushed to a bread crumb consistancy, and season it with just a touch of black pepper and salt.
The kicker is to fry it in some freshly minced garlic. :9
The multigrain and slight sugariness will compliment the garlic really well.

heres how to make fried chicken italian-american style...
fist beat one egg with some milk
then rub salt and pepper and dried herbs (oregano, rosmary, basil, and parsley or italian spice mix) right on the meat (or skin if you like it with skin, i don't)
then you coat the meat with flower
then you dip the flower coated chicken in the egg mixture
then you dip it into bread crumbs (progresso is a good brand for chicken because their crumbs are very fine)
then you fry the chicken in olive oil or grapeseed oil
when you take the chicken out of the pan put it in a bowl with a paper towel on the bottom, to soak up some of the excess oil
