Sesame Seed Encrusted Sirloin

As I'm a chef by trade, I'll be presenting a few of my own recipes.
Let's start with entree:

Sesame Seed Encrusted Sirloin on Water Chestnut & Bamboo Salad with Wasabi Mayonnaise

Portion size = 20

Ingredients

Sirloin

2000g Sirloin
400g White Sesame Seeds
400ml Soy Sauce
20g Ginger
50g Honey
100ml Olive oil
Salt and pepper to taste

Salad

800g Water Chestnuts
800g Bamboo Shoots
100g Bean Sprouts

Wasabi Mayonnaise

15g Wasabi Powder
2 Egg yolks
250ml Olive Oil
5ml Rice Wine Vinegar
5ml Soy Sauce
5g Mustard
Salt & Pepper

Method

Mayonnaise

Prepare mayonnaise as normal, then add soy sauce & wasabi powder & mix well.

Sirloin

Marinate the sirloin in the soy sauce, ginger & honey for 1 hour. Remove from marinade & coat in sesame seeds. Add seasoned oil to hot grill & grill steaks for 1min each side. Set aside & allow to rest. Slice the sirloin into 1cm thickness.

Arrange the sliced water chestnuts & bamboo shoots on the plate. Dress with wasabi mayonnaise & arrange the sirloin slices on top. Garnish with bean sprouts

oooooohhhhh!
I have to make this! I've been meaning to get a heavy cast iron skillet. Now I have a good excuse. Instead of a grill, I'll have to sear the steaks. (I suck at grilling)

You can leave it out & replace it with something else.
