it depends on the cut... a crap cut of sirloin/scotch fillet needs to be med rare at least... a superior cut can be rarer... imo you should only ever cook a good cut of rib-eye bleu.

i like steak when its seared on the inside and warmed through... but rare enough that the meat doesnt bleed when u cut it... that is the perfect fillet...

rib eye cant be cooked like that thought cause it doesnt have the same texture... but... it is far tastier....

mmmm..... Steak....

I prefer rib eye done medium rare.... a little fat is essential for tasty steak... i dont understand u fillet eating snobs....

although if i do get served a nice fillet, its bleu all the way baby...

a fave of ours is to slice a salmon fillet into thin fillets... marinate in soy sauce with ginger for 15 mins... while its marinating, take a cup of sour cream, mix with wasabi (add to taste) and some finely chopped chives.... fry the salmon for 40 secs each side... and serve with sauce.... the wasa...

garlic owns. the trick to garlic butter is to shave the clove uber fine, using a razor, then fry lightly in some ghee... the garlic breaks right down....
lately i've been experimenting with all cloves as supposed to crushed/chopped garlic .... definitely has a more subtle taste.

they're great !! wot it is , is u have grilled bread buttered and cut into strips, u have soft boiled eggs so the white is set and the yolk is runny, cut the top off, and dunk the bread into the egg.... i dont know why they call them soldiers.... probably because this is a standard breakfast in the ...
